Healthy Homemade Easy Chicken Vegetable Soup Recipe

This is not your basic homemade chicken soup recipe.  This is an easy healthy recipe.  What’s the difference you ask?  After doing some research online and watching various videos, I decided I had to blog about my chicken soup recipe since some of the other recipes were crazy!  There was one for boiling the chicken one day, refridgerating it overnight and finishing the soup the next day!  Who has time for that?  Then there was the recipe using a whole fatty chicken.  No way do I want that kind of added fat!

So this is my recipe.  It is healthy, easy and delicious chicken soup and it is also easily modified to add your favorite vegetables.

Ingredients for your grocery list on Path Me Food:

 

  • Chicken Breast, 1 package, cut into bite sizes
  • 52 oz of Rotel or Herdez Red Sauce (you pick the spice amount)
  • 52 oz of water
  • 1/2 celery bunch, chopped
  • 1/2 head of cabbage, chopped
  • 1 zucchini, chopped
  • 1/4 onion, chopped
  • 2 garlic cloves, chopped
  • cilantro, 1 handfull, chopped
  • okra, 1 package frozen

In a large stock pot and over medium heat, saute the onion and garlic and a bit of water so they don’t stick.  Add in the chicken and brown until all the pink color in the chicken is gone.  Add in all the rotel or herdez cans of sauce.  Add in all your chopped vegetables.  Add in the water.  Stir all the ingredients to mix well.  Cover the pot and let it simmer until the vegetables are done.  You will know when they are ready because they will become translucent in color.  Serve with avocado slices, corn chips, tortillas or crackers and enjoy!!  Let us know what you like to put in your chicken soup below in the comments.

Optional Ingredients:  any kind of maccaroni, quinoa, carrots, corn on the cob or kernels, potatoes, yellow squash, green beans, any kind of bean……you get the idea.  You can’t mess this one up!!!  Don’t forget to use Path Me Food to make all your grocery lists and look for coupons, too!
